Ogbono |
Ogbono is also known as dika, etima or odika It is from the kernel of the African wild mango (not related to the common mango but similar to cashew) The nuts are rich in protein and fat and have a slightly aromatic smell. The nuts are stripped of their hull and sun-dried before being ground into a fine flour paste. Ogbono is used as a soup thickener. It gives a certain amount of viscosity to the soup and also adds a slight nutmeg and pepper flavour to it as well. |
