One cup of white corn meal
Half a cup of granulated sugarTwo tablespoonfuls of margarine
One cup of milk
Half teaspoon of ground ginger
One and half cup of flour
One teaspoon of salt
2 eggs + 1 egg white
Slightly moisten corn meal with water then mix with above measure of salt, sugar and flour. Add two tbsp of margarine to dry mixture. Whisk eggs lightly and add to mix along with milk. Add ginger powder. Nutmeg powder is good substitute. Roll dough and cut out into cookie sized segments. Brush tops lightly with egg white and bake in oven cookie trays till golden brown
Can be taken as a snack. To take as a meal, serve with Egusi soup or egg omelette
