JOLLOFF RICE

Ingredients

Half kilogramme of steak(uncooked)
2 tablespoonfuls of cooking oil
Coconut milk
I small can of tomato puree
2 large chopped onions
Handful of chopped green pepper
Salt (one teaspoon or to taste)
Half teaspoon of ground pepper
Half teaspoon of thyme
Half kg of long grain rice
One tin canned green peas (drain solution)

Preparation

Pour oil in large pot and bring to brown. Remove excess fat. Add 3 cups of water and one cup of coconut milk to meat. Stir in tomato puree, onion, green pepper, salt, pepper and thyme. Cook to bubbling. Stir again. Make sure liquid is almost gone then reduce heat to about 3/4 then add peas. Leave to steam until all liquid is evaporated and rice is tender. If rice is still hard, add some more water.

Serving Suggestion

Serve up in large portions. Enjoy!
