Alligator pepper, also known as mbongo spice or hepper pepper, is a spice that is very popular in West Africa, and usually used to replace black peppercorn. With these pungent, peppery seeds, the culinary possibilities are endless. Once crushed, the seeds release a combination of flavour notes - from the initial pungent, peppery flavour to a floral aroma with hints of jasmine, cardamom, and clove. It works amazingly well in a compound butter, spiced baked goods and spiced fruit syrups.
