Ingredients

  • 1 block firm tofu (pressed and cubed)

  • ½ cup desiccated coconut

  • ¼ cup breadcrumbs

  • 1 tbsp cornstarch

  • 2 tbsp soy sauce + 1 tbsp lime juice

  • 1 tsp garlic powder

Method

  1. Marinate tofu in soy sauce, lime, and garlic powder (15 min).
  2. Mix coconut, breadcrumbs, and cornstarch in a bowl.
  3. Coat tofu cubes and place on a baking tray.
  4. Bake at 400°F (200°C) for 25–30 minutes, flipping halfway. Serve with sweet chili or peanut sauce.
