  • 2 tomatoes, chopped
  • 1 cup chopped spinach
  • 1 cup cooked shredded chicken or tofu (optional)
  • 2 tablespoons ground crayfish
  • 2 cups of chicken or vegetable broth
  • Salt and pepper to taste

Method

  1. Heat vegetable oil and sauté onions until golden brown.
  2. Add chopped tomatoes and cook until softened.
  3. Stir in ground egusi seeds and cook for 2–3 minutes.
  4. Pour in broth and add cooked chicken or tofu. Add spinach and ground crayfish, simmer until thickened and tender, then season.
