Ingredients

  • 1 cup egusi seeds, ground
  • Assorted meats and fish (beef,
    chicken, and fish)
  • 1/2 cup palm oil
  • 1 onion, finely chopped
  • 2 cups chopped spinach or ugu leaves
  • 2 tablespoons ground crayfish
  • 2 tablespoons ground pepper
  • Stock or water (as needed)
  • Salt and seasoning cubes, to taste

Method

  1. Combine ground egusi seeds with stock or water to form a paste.
  2. Heat palm oil and sauté onions until translucent.
  3. Add egusi paste to the palm oil, stirring to prevent lumps.
  4. Pour in stock, add meats and fish, and cook until done.
  5. Stir in spinach, crayfish, pepper, simmer until thickened, then season.
