Method

  1. Toast Uda pepper seeds in a pan until fragrant.
  2. Grind the toasted seeds into a coarse powder.
  3. Sauté chopped onions in vegetable oil until golden brown, then add the ground Uda pepper and cook briefly.
  4. Rinse the jasmine rice under cold water until clear, then stir it into the pot to coat with spices.
  5. Add coconut milk and salt, bring to a boil, reduce heat, cover, and simmer until the rice absorbs the liquid. Fluff and serve.
