
Also called Nigerian brown beans or Ghanaian sweet beans, honey beans are a variety of black-eyed peas with a natural and uniquely sweet flavour. These light brown, kidney-shaped cowpeas, are commonly grown in West Africa and are a great alternative to regular cowpeas.
Honey beans are nutrient-rich legumes with a slightly sweet, earthy flavor and creamy texture when cooked. Ideal for soups, stews, salads, and side dishes, they provide a hearty source of protein and fiber.
Soak overnight or for at least 6 hours before cooking to reduce cooking time and improve digestibility. Cook for 45 minutes to 1 hour until tender. Add salt towards the end of cooking to keep the beans soft.
