Iru, also known as locust beans, is a fermented seasoning widely used in West African cooking for its deep umami flavor and strong aroma. Often added to soups, stews, and sauces like egusi, efo riro, and ogbono, it enhances depth and complexity.
 For best results, rinse lightly before use to soften and reduce intensity if desired. Start with 1–2 teaspoons per pot and adjust to taste. Add iru midway through cooking to allow it to blend well with other ingredients and mellow in flavor.
