Peeled Beans

Olu Olu peeled split beans have a delicious nutty, earthy flavour and a texture that's soft yet firm. Cook them in a stock or broth to give them a flavour boost, then add them to anything from salads to stir-fries to soups. They work wonderfully in a range of Caribbean- and Creole-style rice dishes.

In a separate bowl, season and mix together blended beans with salt, 2 stock cubes and 1tbsp of chipotle powder and Italian seasoning. Stir in 3tbsp of melted butter. Add and gently fold in 3 sliced boiled eggs and ½ cup of corned beef chunks (optional). Spray baking tins with cooking spray / oil and pour mixture into tins and cover with foil. Bake on middle rack at 180°C for 20-30 minutes, or until toothpick comes out clean. Remove from the oven and leave to cool.
