  • 1/3 cup banana powder
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil or melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for coating)

Method

  1. In a bowl, whisk together flour, banana powder, cocoa, baking powder, and salt.In another bowl, mix sugar, brown sugar, oil, eggs, and vanilla until combined.
  2. Add the dry ingredients to the wet and stir until a dough forms. Chill the dough for at least 1 hour (it will be sticky). Preheat the oven to 350°F (175°C).
  3. Scoop dough into small balls and roll them in powdered sugar until coated.
  4. Place on a lined baking sheet and bake for 10–12 minutes. Let cool — they will have a soft center and a beautiful crackled top.
