Method

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.In a large bowl, combine rolled oats, shredded coconut, cacao powder, melted coconut oil, maple syrup or honey, and vanilla extract. Mix well.
  2. Spread the mixture evenly on the prepared baking sheet. Bake for 20–25 minutes, stirring halfway through, until the granola is golden brown and crisp.
  3. Allow the granola to cool completely before adding chopped nuts and cacao nibs.Store in an airtight container and enjoy it as a cereal or yogurt topping.
