Method

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.In a bowl, combine cassava flour, coconut sugar, melted coconut oil, eggs, vanilla extract, baking soda, and a pinch of salt.
  2. Mix until well combined. Fold in chocolate chips. Drop spoonfuls of dough onto the prepared baking sheet.
  3. Bake for 10–12 minutes, or until the edges are golden.
  4. Allow the cassava flour chocolate chip cookies to cool on the baking sheet before transferring to a wire rack.
