  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon of vanilla extract

Method

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chopped nuts if using. Pour the batter into the prepared loaf pan.
  5. Bake for 60–70 minutes or until a toothpick inserted into the center comes out clean.
