In a bowl, combine gari, mashed banana, egg, milk, sugar (if using), baking powder, and a pinch of salt. Mix until well combined. Heat a skillet or griddle over medium heat and add butter or oil.
Spoon the batter onto the hot surface to form pancakes.
Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Repeat with the remaining batter.
