  • 2 cups of coconut milk

Method

  1. In a saucepan, combine gari and coconut milk. Cook over medium heat, stirring constantly, until the mixture thickens.
  2. Add sugar, nutmeg, and vanilla extract. Continue cooking and stirring for another 5–7 minutes. Remove it from the heat and let it cool slightly.
  3. Spoon the gari pudding into serving bowls and garnish with raisins or chopped nuts. Chill in the refrigerator for at least 2 hours before serving.
