Native Jollof Rice, also known as Iwuk Edesi by Erik people or Palm Oil rice is a rich Jollof rice style rice dish. Considered solo food in certain parts of Nigeria.

Ingredients

  • 2 cups Easy Cook Basmati Rice
  • 1 Large onion for blending
  • ½ Onion chopped
  • ½ cup Olu Olu Palm oil
  • ½ Cup Dried Shrimp (Optional)
  • 2 Tbsp Locust beans (Fermented Iru).
  • 4 Small Dried Catfish (Optional)
  • Boiled meat of choice – I used cow skin, keep the stock (Optional)
  • 2 Tbsp ground crayfish
  • 1 ½ Cups Canned Tomatoes
  • Scotch Bonnet Peppers (To Taste)
  • Salt (To Taste)
  • 1 large Red Pointed bell pepper
  • 1 Cup of Meat/Chicken stock or 3 Tablespoons Meat/Chicken Seasoning
  • 1 ½ cup Chopped spinach
  • 1 Medium smoked fish deboned and cleaned
  • 2 Cups Water

Method

  1. Wash rice till water runs clear. Drain and set aside.
  2. In a blender add the chopped tomatoes, 1 large onion, scotch bonnet peppers and red pointed pepper. Blend till smooth.
  3. Soak the smoked fish and dried catfish in boiling water. Debone the smoked fish and set fish aside.
  4. Add Olu Olu Palm oil to a pot on medium heat, add chopped onions and sauté till translucent. Then add Locust beans. Ground crayfish and blended pepper mixture.
  5. Allow to cook for about 6 minutes then add salt and chicken/ or meat stock. Use chicken or meat seasoning if you don’t have stock.
  6. Add dried shrimp, dried smoked and catfish and cow skin. Add water and washed rice.
  7. Cover and cook on low heat till soft adding water as needed.
  8. Add more seasoning or stock to taste.
  9. Garnish with chopped spinach and allow to steam through for about 5 minutes then serve.
